(Makes 4 servings)
Ingredients:
2 sweet potatoes
2 cups baby carrots
1 cup water
2 cups Pacific low-sodium vegetable broth
1/2 teaspoon celtic sea salt
1 packet stevia
1/4 teaspoon cumin
1/2 teaspoon coriander powder
1/4 teaspoon minced ginger
1/4 teaspoon garlic
Directions:
1. Bake the sweet potatoes and boil the carrots until soft.
2. In a blender, mix all ingredients and process until smooth.
3. Pour mixture into large saucepan and heat to taste.
