Comforting Carrot & Sweet Potato Soup

Try out this delicious soup recipe at home on any cold winter night. It is super easy to make with no chopping required.

Recipe is borrowed from “Detox for Women”.

(Makes 4 servings)

Ingredients:

2 sweet potatoes

2 cups baby carrots

1 cup water

2 cups Pacific low-sodium vegetable broth

1/2 teaspoon celtic sea salt

1 packet stevia

1/4 teaspoon cumin

1/2 teaspoon coriander powder

1/4 teaspoon minced ginger

1/4 teaspoon garlic

Directions:

1. Bake the sweet potatoes and boil the carrots until soft.

2. In a blender, mix all ingredients and process until smooth.

3. Pour mixture into large saucepan and heat to taste.
