Cranberry Walnut Zucchini Bread
Dry Ingredients
1 Cup Sorghum Flour
1/2 Cup Tapicoa Flour
2 teaspoons Baking Flour
1/2 teaspoon Baking Soda
3/4 teaspoon Xanthan Gum
1/2 teaspoon Sea Salt
1 teaspoon Cinnamon
1 Cup Succonaut Sugar
1 medium sized Zucchini (skinned and grated)
1/2 cup chopped Walnuts
1/2 dried Cranberries
Wet Ingredients
1/3 Cup Olive Oil
1 teaspoon Lemon Juice
2 Egg Whites
1/4 Cup Coconut Milk
Preheat oven 350 Degrees
Line 9”Loaf pan with parchment paper oil lightly
In large mixing bowl mix all dry ingredients with a whisk
Add all Wet Ingredients
Add 3/4 amount of grated Zucchini, Walnuts, and Cranberries
Use Spatula to put batter into loaf pan
Add 1/4 remaining zucchini to the top of the loaf
Bake 50-60 Min. Test with tooth pick no batter or crumbs should emerge
